5 Ways To Use Up Your Roast Chicken leftovers

We love a Roast Chicken on a Sunday.

Nothing tastes quite as good as the crispy Chicken skin and the moist meat covered in gravy. But what we like the most, is the leftovers that come with a roast.

You’ve already cooked the Chicken so you’ve already got the hard work out of the way.

 

So we’ve compiled our favourite 5 ways to use up roast Chicken leftovers. No more wasting Chicken or feeling uninspired. Just plenty of healthy, tasty and quick meals!

Making Chicken stock, the base to most Chicken dinners:

Trim all the cooked meat off the Chicken carcass and throw into a large pan with the following:

  • Leeks, chopped
  • Carrots, chopped
  • Onions, chopped
  • Celery with leaves, chopped
  • Garlic cloves, peeled and crushed
  • Bay leaves
  • Rosemary
  • Thyme
  • Black peppercorns
  • 5 litres of water

Boil away for 5-7 hours. Skim and sieve the stock then cool and refrigerate.

1.Chicken Risotto

One of our flavoursome favourites is Chicken Risotto. It’s a pretty simple dish and not very labour intensive, except on your arms because of all that stirring. What you need to get started is:

  • Roast Chicken, chopped
  • Risotto rice
  • 1 large white onion
  • A handful of button mushrooms
  • Smoked bacon lardons
  • White wine
  • Chicken Stock
  • Parmesan to serve

2. Chicken Soup

Hearty, full of flavour and goodness, Chicken soup is always a winner. What could be better than a warm and comforting bowl of soup? What you’ll need is:

  • Chicken stock
  • Roast Chicken, shredded
  • Seasonal greens; celery, kale, spinach
  • Rotelle pasta
  • Green Chilli pepper, diced
  • Salt and pepper, to taste
  • Crusty bread, to serve

3. Chicken Salad

Super quick and easy healthy eating. Ideal for lunch at work. Tip, we keep our leaves and toppings seperate to stop a soggy salad! To make a simple and tasty lunch, you’ll need the following;

  • Roast Chicken, shredded
  • Salad leaves: Spinach, Rocket etc.
  • Avocado (with a squeeze of lemon juice to stop it going brown)
  • Peach slices
  • Crumbled feta cheese
  • Salad dressing: apple cider vinegar, lemon juice, olive oil and salt and pepper. Simple & delicious.

4. Chicken Stir Fry

A stir fry can be as simple or complicated as you like. We like a quick and easy stir fry with minimal cooking time. With natural flavours to pack a punch, what you’ll need is;

  • Roast Chicken, chopped
  • Beansprouts
  • Cabbage, shredded
  • Onion, chopped
  • Mushroom, chopped
  • Peppers, chopped
  • Garlic, crushed
  • Red & Green Chilli, diced
  • Wok ready noodles
  • Apple cider vinegar
  • Soy sauce
  • Squeeze of fresh lime

5. Chicken, Chorizo & Mozzarella toastie

Ideal for when you want an easy bite but don’t want to compromise on flavour. All you need is;

  • Chorizo sausage, chopped into small chunks (amount depending on how much you like Chorizo)
  • Roast Chicken, shredded
  • Mozzarella
  • Spinach leaves
  • 4 slices of bread
  • Butter
  • Salt and black pepper
