Organic Garlic Chicken Nuggets (Gluten Free option available)

Have you ever sneaked a chicken nugget from your dearly beloved child’s plate, popped it in your mouth and then regretted it immediately? If, like me you can’t bear the commercial mass produced “crumb” on breaded chicken – (no matter how posh the brand)  you may like these organic garlic nuggets.

These child and adult-friendly organic chicken garlic nuggets of joy are ideal with a garlic dip or good old tomato ketchup.  You can also oven bake if you are weight-watching, shallow or deep fry – depending upon your preference.  (If you do oven bake they will remain quite pale and might need a scattering of rocket for decoration – but think of the saved calories!) I used two good sized breasts (1 breast per person) cut into bite sized pieces or you can buy organic diced chicken directly from Springfield Poultry.

These Panko breadcrumbs hail from the Chinese supermarket in Birmingham China Town (as the big bag is cheaper there than in my local supermarket so I top up when we can). Panko breadcrumbs have a light, airy and delicate texture that helps it crisp as it cooks. Making it especially wonderful for fried food because it absorbs less oil than breadcrumbs, keeping food more crisp and crunchy.  A gluten-free version of Panko is on the market – click here for details.

Whisk up an egg and give the chicken a good bath in it and then a really good covering in the crumbs; you can then think about whether you would like to add a bit of chopped garlic, some spices or perhaps a bit of chilli.  Smoked paprika is good too. Then cook as is your preference – these are oven cooked and then browned in a bit of butter (naughty I know but tastes so good with the garlic I mixed with the crumbs! ) I wish you could smell the result.

My (fussy eater) daughter came in from school and demolished the lot!  Luckily I had put some aside and we had them as a snacky Sunday night supper with a dollop of Aoili on the side.  Fish is really good done in the same way with a lemon mayonnaise to dip!

Et voila – delicious and you know exactly what’s in it. No nasties!
